I usually just stir-fry cauliflower with various other ingredients—a simple, quick dish. But this time, I wanted to do something different and turn the cauliflower into a special treat that’s perfect for snacking or enjoying with rice.

I’m making use of the cauliflower from the garden; after stir-frying a whole head with bok choy yesterday, I plan to create a dish today that is even more delicious than yesterday's stir-fry.

If you’re a cauliflower lover, you might have seen my previous post about harvesting cauliflower from the small garden next to my house. Since I have plenty of time at home today, I’ve decided to cook it up. Cauliflower is incredibly quick to prepare, especially when fried like this. I’ve made batter-fried broccoli before, but this time I’m trying cauliflower with a completely different flavor profile.

I’m combining it with simple seasonings to create a dish that tastes just like fried chicken—a sort of "mock fried chicken." Curious about the recipe? Let’s check out the step-by-step instructions below.

Ingredients

200 grams cauliflower
3 tablespoons wheat flour
2 tablespoons cornstarch
Breadcrumbs (as needed)
3 red chilies
1 bird's eye chili
2 cloves garlic
1 shallot
¼ teaspoon coriander
¼ teaspoon salt
¼ teaspoon mushroom bouillon

Preparation

Blend the chilies, garlic, shallot, and coriander with a little water until smooth, then mix the paste with the two types of flour.

Cut the cauliflower into florets, keeping only the flowery tops with their stems.

Mix the cauliflower into the batter you just prepared, ensuring everything is evenly coated.

Roll the coated cauliflower in breadcrumbs, then set aside.

Wishing everyone here a happy month of October full of abundance blessings. as we keep enjoying good health and eating always something healthy.

Today’s recipe is one made from a half ripe plantains. This means that the plantains are not yet properly ripen. Which usually is the best stage of the plantains to obtain best results for this recipe.

Plantains chips are known as staples in my country Nigeria 🇳🇬 . A very delicious snacks you can never stop eating once you get your fingers on them. And honestly, you can get to buy this snacks in every supermarkets and superstores you come across, making it once snacks that is never out of season, but can be expensive once plantains season leaves.

But one thing with plantains chips is that it’s fried in different mix when it comes to what should be added to them for best taste. Some can be fried with just salt 🧂 added to them, some fried with chili 🌶 powder added to them, and others can be with salt 🧂, chili 🌶 and even onion 🧅 slices. So this in turn leaves them with different taste and aroma.

Homemade plantains chips then becomes the best option for many who loves plantains chips. Homemade plantains chips enables you to make and choose your choice of chips. By optioning for homemade plantains chips you will make and add your choice of spices. It could be just salt, chili powder or all the three spices. In this very recipe, I have just used salt and chili 🌶 powder because I love onions only in my potatoes 🥔 chis.

And through homemade, you also decide how dry you want it. Crispy or a bit softer, especially if kids are involved. A simple and easy snacks you can make out of plantains. Store in an air tight container and leave at the dinner table for little hunger snacking while lunch or dinner is being cooked. The idea to this recipe is to fry dry to leave it crispy and spicy 🌶.

Below are the step by step process for this delicious chips

INGREDIENTS: (8 servings)

Once the oil is hot, add the eggplant pieces and cook them as shown below. 🍆🔥

Next, add the chopped tomato, water, and 1 teaspoon of sugar. Mix everything well and cook for about 2 minutes. 🍅🥣

I am here again to showcase how to and how I prepared my vegan filled sweet potatoes.
‎

‎Today was my first time preparing or trying this method. No one taught me of it apart from my instinct 😜. Initially, I do prepare potatoes with either scent leaves or with utazi(a specie of bitterleaf). But, in today's own, the idea of adding 3 leaves together came into my metabolism and I concur with the idea. Honestly, it came out so beautiful and tasty. Let me show you how I did it.
‎
‎First and foremost, I made use of:
‎
‎- 2 medium size of sweet potatoes
‎- Palm oil (desired quantity)
‎- Salt (to taste)
‎- Water (2 cups or base on the quantity you're cooking)
‎- Scent leaves (20 leaves)
‎- 20 Bitter leaves (utazi)
‎- 10 Pumpkin leaves (Ugu)
‎- Onions (1 medium size)
‎- pepper (as desired)
‎Let's move over to cooking itself.
‎
‎I cut off the 2 tips, ends or tails of the potatoes.
‎

‎I washed them with running water
‎

‎Then, I cut the potatoes as desired
‎

‎ Then rewashed to make sure there is no atom of sand.
‎

‎I put them inside the pot and added water as desired.
‎

Thn, i placed it on fire.

‎While waiting for it to soft, I washed and sliced both onions, and all the vegetables.
‎
‎
‎
‎First, I pounded the Onion until it became paste, next, I added both scent leaves and utazi and then continue pounding until they form paste.
‎
‎

‎
‎At the expiration of 15 minutes, the potato was as soft as I desired. Next, I brought it down.
‎
‎If you noticed, I didn't peel off the skin of the potatoes before cooking. At that point, I sieved out the water.

Please, don't pour away the water. I peeled off the skin and pour them back to pot, poured back the water, placed on fire and allowed it to start boiling.
‎

‎Immediately, I added the already made paste and stir.
‎

‎I also added both pepper, salt and red oil(palm oil)
‎
pepper

salt

oil

‎Finally, I added my sliced pumpkin leaves.
‎

‎I allowed it to simmer for a minute. Then, I stirred and our food is ready.
‎

‎NOTE I didn't remove the skin of the potatoes before cooking in other to extract all the ingredients and vitamins contained in the skin. Because, according to scientists and nutritionists, the skin contains major vitamins and micronutrients like vitamin-B6,C, Riboflavin, foliate etc. So, peeling off the skin before cooking is like removing the main nutrients.
‎
‎Thanks for learning my new cooking style. See you another day.

Spring roll pastry is often the go-to snack at home. I toss tofu with vegetables, but with this pastry, I often stock up on spring roll pastry. I was hungry yesterday and wanted a crunchy snack, so I came up with the idea of making these rolled chips.

The combination of spring roll pastry and chili and lime leaves creates a different sensation, in my opinion. It's like enjoying the recently viral dry seblak, only with more MSG and other flavorings. So, to minimize these, I'm going to try making this delicious homemade snack. Here are the step-by-step instructions.

Ingredients

10 spring roll pastry sheets
5 lime leaves
3 red chilies
1 tablespoon flour
Sufficient water
Sufficient salt
¼ teaspoon mushroom stock

Procedure

Mix the water and flour together until thickened.

Then, take one sheet of spring roll pastry and roll it lengthwise with the flour mixture.

Mung bean curry is a traditional homemade dish that can be easily added to our daily meals as a delicious and nutritious food. When soft, boiled mung beans are cooked together with aromatic spices, onion, garlic, and creamy coconut milk, they turn into a wonderfully flavorful and fragrant curry.

This curry is perfect to enjoy with warm rice, roti, or any of your favorite dishes. I prepared it in my own simple way, and I hope you will give it a try too.

So, shall we see how I prepared this delicious mung bean curry?

Ingredients...

2 cups boiled mung beans
1 cup coconut milk
A little chopped onion
A few curry leaves
2 chopped green chilies
A little chopped garlic
Salt, as needed
½ teaspoon fenugreek seeds
½ teaspoon turmeric powder
½ teaspoon chili powder

The order of preparation.

First, finely chop the onion, green chilies, and garlic.

Next, take a cooking pan and place it on the stove. Add about 1 tablespoon of coconut oil. Once the oil is hot, add the fenugreek seeds, chopped onion, garlic, curry leaves, green chilies, turmeric powder, curry powder, and chili powder. Mix everything well and sauté for a short while until fragrant.

Next, add the boiled mung beans to the pan and mix everything well.

Next, add the coconut milk and the required amount of salt. Cook for about 4 minutes, then remove it from the stove.

Once prepared this way, the mung bean curry becomes soft, aromatic, and incredibly delicious. The flavors of the spices blend beautifully with the creamy coconut milk and tender mung beans, creating a wonderfully satisfying taste. Serve it warm and enjoy this nutritious homemade dish with your loved ones.

And September is our anniversary month; we are marking five years on Hive—IT’S OUR FIFTH BIRTHDAY! This is a cause for joy and celebration for us; we are truly happy to be on Hive and to remain in a space filled with harmony, where veganism is primarily expressed through recipes—and, on occasion, through other forms of expression.

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

This has been a time of growth—a period during which we have been blessed to have honest members committed to creating great vegan recipes, as well as to sharing and forging bonds of friendship and fellowship both within and outside the community. It is wonderful, as it creates a beautiful synergy where we all grow and learn about veganism. Thank you so much!

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

Although this particular year has been very difficult—due to various circumstances and extraordinary situations—leading to a decline in some community activities, we have nonetheless strived to keep this space dedicated to veganism active. Undoubtedly, our continued presence is due to the support of those who have joined our voting trail and our delegators, as well as the whales and curation projects that provide us with such valuable support. We could not have carried on without all of you. A thousand thanks!

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

You do not need to be vegan to post and participate in the Plant Power Vegan community; what matters is that you respect our community guidelines and share 100% vegan recipes. The journey toward veganism is taken at one's own pace and is rooted in respect and love for Mother Earth and all of creation—including animals, plants, and fellow human beings. We invite you to reflect on this and explore the vegan philosophy of life.

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

We also take this opportunity to announce that in the coming days we will be calling for a contest, that we hope you will all enjoy.

For several months, perhaps years, we've been emphasizing the need for Hive blogs to be high-quality and feature varied recipes (if you publish food-related content). Over time, we've published articles explaining the importance of excellence and diverse recipes. We've also explained why repetition is detrimental to these blogs. The articles that address this topic are as follows:

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

From personal experience and common sense, we know that obtaining ingredients for recipes in general, and for vegan recipes in particular, can be very difficult, especially in some countries. Whether due to economic, climatic, supply, or other factors, we know that we can't always prepare the recipes we'd like to share.

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

But we also know that, with a little interest, the desire to do something good, using creativity and ingenuity, and enhanced by learning and research, good and varied recipes (vegan or not) can be created; that is why below we want to present some ideas that may be useful for this purpose:

Ideas for using one ingredient and getting multiple recipes

Choose a fruit, vegetable, or grain that's in season in your area. This way, you can get it at a good price, fresh, and in abundance. For example, it's currently autumn in the Northern Hemisphere, and it's pumpkin season. You can buy them very cheaply, they're incredibly fresh, you can find varieties that aren't available at other times of the year, and they're sold in many places. If you have a garden, you can even harvest and cook them.

Research recipes on social media, online cookbooks, or printed cookbooks, looking for recipes where the main ingredient is your chosen one. Save the ones you like best.

You can talk to your family or people in your area and research dishes from your country or region—perhaps forgotten dishes—that use that ingredient. This has added value because you're rescuing your culture.

If you find a non-vegan recipe, it may be possible to veganize it, so don't let that stop you from making it.

Try alternating between sweet and savory recipes, and also make drinks. This will add more variety to your blog.

Here @sirenahippie

In recent weeks, we've seen with concern the increase in posts about agriculture, gardening, and beverages in this community, Plant Power (Vegan). Apparently, some users don't read our community guidelines or understand our specific niche, which is why we decided to create this post.

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

Plant Power (Vegan) is a primarily gastronomic-based community. We occasionally host activities, contests, and initiatives where we address other aspects of veganism, such as environmentally friendly practices (recycling, reusing, reducing), tree and plant appreciation, and animal appreciation, but these are very sporadic activities and don't fit our niche.

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

On Plant Power (Vegan), you can share your 100% vegan, non-vegetarian, or vegan recipes, and this refers to food, NOT drinks. You can also share vegan food experiences here, such as a visit to a restaurant where you've eaten vegan, or the vegan food you were served on a flight. Just read the rules to know what to post and what not to post.

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

Now, on Plant Power (Vegan), YOU CANNOT POST articles related to gardening, fruit growing, horticulture, and the like. For that, there are communities on the blockchain where you can post that content. YOU CANNOT POST posts about drinks, teas, juices, etc., even vegan ones; for that, we have our sister community, Amazing Drinks. To post drinks, we recommend going there and carefully reading the community rules beforehand.

![image.png](https://files.peakd.com/file/peakd-hive/plantpoweronhive/23swa546E3NPwLA5DjbncXJ9t5DhbyLeGJtSoFe34xKSTxZPLM2oJZKbQu6wCR4fWnkux.png)

We hope this information is useful, thus avoiding posts with content unrelated to this niche from being downvoted and silenced
